Why make regular old mashed potatoes when you can have cheesy smashed potatoes as a side dish this Thanksgiving? What’s the difference between mashed and smashed? Mashed is a more creamy consistency, while smashed comes out chunkier. But, it doesn’t matter how you like your potatoes because we have a great cheesy potato recipe for you to try
Ingredients
2 pounds of baby potatoes
1/4 cup of sour cream
2 cups of cheddar cheese (shredded)
3 tablespoons of chopped chives
Seasonings (salt and pepper)
Cut, peel and place your potatoes in a pot of cold, salted water. Cover the pot and let it boil. After the potatoes begin to boil, turn down the heat and let them cook for another 15 minutes.
Next drain the water and place the potatoes back into the hot pot. Now smash them with masher (leave big chunks) while combining with sour cream and cheese. Once the cheese melts throw in the chives and seasonings and mix together. And just like magic you are done.
